Cut:
- Removal of the foot at the knee;
- Revealing of the topside and knuckle;
- Cut starting from the knuckle end with a rounded cut at the level of the ilium, three fingers’ width from the hip bone;
- Revealing of the rind from the back, removing a strip approximately 6 cm wide.
